Basil Crusted Salmon


  • 4 Salmon Fillets
  • 1/4 Cup of Ground Almonds (30g)
  • 2 Cloves of Garlic
  • Handful of Fresh Basil
  • Zest of 1/2 Lemon
  • Coarse Salt & Pepper
  • 1 Tablespoon of Olive Oil

This is the perfect midweek meal- fast and really nutritious. Salmon is my favourite fish and it’s full of omega 3s and protein. This is such an easy way to add loads of flavour and the leftovers are delicious cold too. In the picture, I served mine with some simple roast parsnip chips.

Basil Crusted Salmon 3

Preheat oven to 200’C. Finely chop the basil and mince the garlic. Add them to a bowl with the ground almonds. Zest the lemon and add it to the bowl with a good pinch of coarse salt and pepper. Mix everything together well.

Lay the salmon fillets out on a lined roasting tray. Drizzle the olive oil over the salmon, then dredge the top side in the almond basil mixture until well coated.

Pop the salmon in the oven at 200’C for 13-15 minutes until the salmon is cooked through and the crust is lightly golden. Serve with a wedge of lemon.

    Hi Indy for the coconut bread we can’t have too many eggs here my son has an intolerance to them what would you use as an alternative

      I haven’t tried this one with an egg substitute yet but I usually use 1 tablespoon of ground chia or flax + 3 tablespoons of water per egg. Mix it together and leave it to sit until it’s the consistency of a raw egg x
