Sundried Tomato & Feta Quinoa Salad


Serves 6

  • 400g of Cooked Quinoa
  • 50g of Feta
  • 50g of Sundered Tomatoes (In Olive Oil)
  • 4 Spring Onions
  • 100g of Greek Yoghurt
  • Juice of 1/2 Lemon
  • 2 Tablespoons of Olive Oil (from Sundried Tomato Jar)
  • Coarse Salt & pepper

This is my favourite way to have cold quinoa. My mom used to make this as a pasta salad when I was little and to me it tastes like summer in a bowl. The trick is to use good sundried tomatoes that are in a really flavourful olive oil, using the oil in the sauce takes it to a whole new level. This is perfect for picnics or lunch boxes or for keeping in the fridge for snacks and tastes amazing with a barbecue.

Add the cold cooked quinoa to a large bowl. Cube or crumble the feta, slice the spring onions and roughly chop the sundried tomatoes, then add them all to the bowl.

In a small bowl combine the greek yoghurt, lemon juice and two tablespoons of the olive oil the tomatoes were soaking in. Add a good pinch of coarse salt and pepper and whisk well.

Add the yoghurt sauce to the quinoa and mix well. Serve or store in the fridge for later.

  1. I absolutely love quinoa and have never thought to put sun dried tomatoes in it. Yum! I love how versatile it is and it takes on the flavor of whatever surrounds it.
