Egg Fried Cauliflower Rice

- 1 Large Head of Cauliflower
- 2 Tablespoons of Sesame Oil
- 1-2 Tablespoons of Tamari
- 2 Carrots
- 2 Spring Onions
- 1 Onion
- 100g of Mushrooms
- 100g of Beansprouts
- Big Handful of Spinach, Bak Choi, Chinese Cabbage
- 3 Eggs, Whisked
- Optional: Bacon
You won’t believe how much this tastes like egg fried rice! It’s the perfect healthy swap for a takeaway and you can really make it your own- the amounts of added vegetables don’t matter too much, just use your favourites or whatever you’ve got and you can keep it vegan or add in bacon or chicken/prawns depending on what you like. I love sprinkling on toasted sesame seeds before serving. Leftovers taste great heated up the next day so make the whole batch even if you’re cooking for less!
Start by washing and chopping all of your veg. Whisk the eggs and if you’re using bacon, slice it into thin strips.
Roughly chop the cauliflower and add it to the food processor and blitz until you have a fluffy ‘rice’ and set it aside in a large bowl.
Heat a large pan or wok on medium/high heat. If yore adding bacon, slice it into small strips and then add it to the pan. Cook it until it’s lightly browned and then add it to a large bowl.
Add a tablespoon of sesame oil to the pan and add all the veg (if you’re using spinach don’t add this just yet as it cooks so quickly). Drizzle in a tablespoon of tamari and cook the vegetables for a few minutes until they have softened and wilted. Add them to the bowl with the bacon.
Straight away, add the eggs to the pan and vigorously scramble them, breaking them up into little pieces. It should only take about 30 seconds! Add the eggs to the bowl with the veg and bacon.
Add a little more sesame oil to the pan and pour in all of the cauliflower. If your using spinach add this in now too. Cook it for about 7 minutes, stirring only a few times so that it gets a chance to cook.
When it’s cooked add everything back into the pan and toss it around. Drizzle in a little more tamari if you like. Cook until all heated through and then serve.
