Sweet & Spicy Nuts


  • 2 Cups of Mixed Nuts - Cashews, Pecans, Almonds (300g)
  • 1 Egg White
  • 1/4 Cup of Coconut Sugar (35g)
  • 1 Teaspoon of Cayenne Pepper
  • 1/2 Teaspoon of Cinnamon

These might just be the most addictive thing on the planet. They’re annoyingly delicious and completely irresistible – absolutely ideal for Christmas entertaining. This time of year, I make them in big batches and have a bowl full on the coffee table at all times.


Preheat oven to 160’C.

Whisk the egg white with an electric mixer until white and really foamy, you should be able to tilt the bowl and have the egg whites slide around in one piece.

Combine the coconut sugar and spices. While still whisking, stir the sugar/spice mixture into the egg white.

Add in the nuts and stir them so that they’re evenly coated.

Spread the nuts out on a baking sheet and bake for about 18 minutes.

Take them out and leave them to cool and crisp. Store in an airtight container.
