Courgetti Egg Nests


Per Person

  • 1 Courgette
  • 1 Egg
  • Olive Oil
  • Coarse Salt & Pepper
  • Optional: fresh herbs, pesto, feta, seeds, salsa etc

This is a really simple and easy way to spruce up your eggs. They only take a few minutes to throw together and you can make them a little bit different every time by adding in any extras you like.  The recipe below tastes amazing as is, but I like to mix it up each time adding in whatever I have at them time like fresh herbs, feta, pesto or seeds.

Spiralize your courgette into a large bowl. Drizzle on a little olive oil and season well with salt and pepper, then use your hands to toss it all around.

Place the courgette into a small baking tin so it fits nice and snugly. Arrange it so you make a little well in the centre for your egg and crack the egg straight in.


Sprinkle with salt and pepper and cook in the oven at 200’C for 12-15 minutes until the egg is cooked to your liking.

Serve straight out of the baking tin or use a spatula to slide the nest out onto a plate or board.
