Mediterranean Chicken


  • 400g of Chicken Breast
  • 1/3 Cup of Olive Oil
  • 1/3 Cup of Capers, Drained
  • 1/3 Cup of Olives, Pitted
  • Juice of 2 Lemons
  • 2 Cloves of Garlic, Minced
  • 2 Teaspoons of Dried Oregano
  • 2 Sprigs of Rosemary
  • Coarse Salt & Pepper

This mediterranean chicken is one of my favourite dinners at the moment- it’s so flavourful and comforting and you can just throw everything in the dish and pop it in the oven. It’s also great if you’re having people over as once it’s in the oven you can just relax until it’s time to eat! The chicken tastes amazing after baking in the gorgeous herbs, lemon and olive oil and the capers and olives are so delicious as they soften in the citrusy juices. I definitely recommend serving it with quinoa, or something similar, as you need something to soak up the incredible sauce!

In a large dish, pour in the olive oil and lemon juice. Add in the minced garlic, capers and olives and mix around.

Add in the chicken breasts and stir around to coat in the lemon and oil. Scatter the dried oregano and rosemary leaves evenly over the top and sprinkle with coarse salt and pepper.


Leave to marinate for up to 24 hours, or pop straight in the oven and cook at 180’C for about 40 minutes until the chicken is cooked through, basting the chicken with the juices half way through. If using mini chicken fillets (as pictured) cook for about 25 minutes until cooked through.

    Hi, thanks so much for this recipe, I made it and it was delicious! I want to do it again for 8 people – can I double all of the ingredients or just some of them? Also will the cooking time increase with a slightly bigger pan than before, or will it still be 25 minutes at the same temperature (for 800g mini fillets)?

      So glad you enjoyed it! If you’d like to double it you need to double all the ingredients. It will probably take a little longer but not too much longer so just keep an eye on it after 25 minutes. Hope everyone else loves it!x
