Perfect Guacamole


  • 2 Large Ripe Avocados
  • 2 Cloves of Garlic
  • Juice of 1 Lime
  • 1/4 Large Red Onion
  • Handful of Fresh Coriander
  • Coarse Salt & Pepper

Perfect guacamole is hard to come by but this one’s pretty perfect to me. A lovely crunch from the red onion, beautiful freshness from the coriander and just the right amount of garlic and lime. It’s good with everything and is the perfect summer dip or spread.


Dice the onions, chop the coriander finely and mince the garlic

Scoop the avocados from their skins and add them to a large bowl. Add in the onions, coriander, garlic, lime juice and a good pinch of coarse salt and pepper.


Mash everything together with a fork so it’s chunky/smooth to your liking. Taste and add more salt, pepper or lime to your liking.

Serve straight away. This will keep for a few days in the fridge in an air tight jar or container- pour a thin layer of water over the top, then put the lid on and pop it in the fridge, this will stop it browning. When serving, drain off as much water as you can, then mix everything together!

    I always add cut up tomatoes and maybe 2 teaspoons of ground cumin (the cumin really makes it).
