Boxing Day Benedict


  • 4 Slices of Leftover Ham
  • 1 Bunch of Asparagus
  • 2 Eggs
  • 1 Portion of my Healthy Hollandaise
  • Chives
  • Salt & Pepper

Eggs Benedict is the reigning king of breakfast and this is the most guilt free version there is. It really is just as luxurious and delectable but you’ll still feel great after eating it. There are so many amazingly delicious ways to use leftover Christmas ham but this Boxing Day Benedict has got to be one of the best. Of course, you can make this any time of year but gorgeous leftovers make the perfect excuse!

Boil or roast your asparagus and then plate it. Add your slices of ham right on top.


Next poach your eggs to your liking, or take the easy way out and fry them sunny side up! While the eggs are cooking, make your hollandaise.

Top each plate with an egg and drizzle the hollandaise right on top. Sprinkle with chopped chives, salt and pepper and dig in!
