Sun Dried Tomato & Cottage Cheese Stuffed Chicken Breast

- 2 Chicken Breasts
- 5-6 Sun Dried Tomatoes
- Handful of Fresh Basil
- 3 Tablespoons of Cottage Cheese
- 1/2 Lemon
- Dried Herbs
- Salt & Pepper
Sun dried tomatoes always remind me of summer and this is the perfect dinner to have out in the sun. It’s a delicious way to spruce up chicken breasts and cottage cheese is a great way to get some extra protein in!
Chop the sun dried tomatoes and basil into little pieces. Mix them into the cottage cheese with a little salt and pepper and a few squirts of lemon.
Use a sharp knife to cut into the side of the chicken breasts, cutting all the way back to make a big pocket.
Fill the inside generously with the cottage cheese mixture.
Sprinkle with dried herbs and squeeze the rest of the juice out of the lemon on top.
Heat some coconut oil in a pan and add the chicken to it. Let it cook for a few minutes on each side just to brown it. Then add it to a baking sheet and cook at 220’C for about 10 minutes until cooked through.
I served mine with some fresh spinach, olive oil and lemon. This recipe is Gluten Free.
