Vanilla Coconut Protein Balls

- 1 Cup of Cashews (150g)
- 1 Cup of Dates (150g)
- 1 Scoop of Vanilla Protein (I use Sunwarrior Warrior Blend)
- Desiccated Coconut, for coating
These are so yummy and incredibly addictive so they require some self restraint not eat the whole batch! There are so many recipes out there for bliss/protein balls- with oats, dried fruit, nut butters etc, you can add in pretty much whatever you like and make loads of different flavours. This is my really simple, grain free, four ingredient version. They’re so delicious and perfectly sweet and chewy, a great little healthy snack packed full of protein, fibre and calcium. They’re also amazing crumbled over oats or yoghurt or even added to smoothies.
Soak the dates in boiling water, for at least 10 minutes. Add the cashews to your food processor and blend until fine. Drain the dates and add them the food processor with the cashews. Blitz until they break down, combine and then start to clump together.
Then add in the protein and blitz until it starts to get crumbly and then clump together again. Make sure to scrape down the sides a few times so that it blends evenly.
Use your hands to squish and roll the mixture into balls. I made balls that were quite big (about 4 bite size) so I got 8 out of the mixture, if you make smaller ones you could get 10-12.
Scatter the desiccated coconut out on some parchment paper and roll the balls in it to coat.
I store mine in an air tight jar either in the cupboard or fridge.
