Almond Cacao Balls

Ingredients

  • 200g of Almonds
  • 1/4 Teaspoon of Vanilla Powder or 1 Vanilla Pod
  • 10g of Cacao Powder
  • 15ml of Melted Coconut Oil
  • 30ml of Maple Syrup
  • Sea Salt

These are gorgeously sweet from the intense vanilla powder and have so much chocolatey goodness from the rich cacao powder and sea salt. They’re full of Vitamin E and antioxidants and they’re the dream for any chocolate lover. Almond cacao balls 1

Roast the almonds at 180’C for 8-10 minutes until golden.

Add them to your food processor and blend until you have a very fine flour. Add in the vanilla powder, cacao powder and a good pinch of sea salt and blend until combined.

Add in the coconut oil and maple syrup and blend on high. The key to these is to keep blending. You want to blend on high speed for about 3 minutes (depending on your machine). Keep blending until you basically have a thick nut butter. The mixture should be starting to stick together and glisten-  if it’s dry and crumbly keep going.

When the mixture is the right consistency, roll it into balls.

      You can use ground almonds but roasting the almonds makes a huge difference to the flavour, which is why I use whole to start with. If you want to use ground I would roast them very carefully (they burn really easily!) until golden and then use them. You would need 160g of ground x

    Can I use almondbutter instead as I have a big jar of it and not sure on how to use it.

      You can but it would need more dry ingredients as almond butter will make the mixture too wet, so I would use almonds for this one. Loads of my recipes use almond butter though if you want to have a look and use it for another x

      Vanilla powder makes a huge difference to the flavour, if you can’t find it you can use the powder from inside a vanilla pod (you can get them in most good supermarkets) x

    Fabulous recipe and I’m delighted to see not too much sweetener .While I have a sweet tooth myself I find most recipes even healthy ones add far too much syrup , I would normally half the amount stated in the recipe so I’m looking forward to trying these cacao balls
