Feta & Spinach Turkey Meatballs

- 500g of Turkey Mince
- 40g of Spinach
- 1 White Onion
- 2 Cloves of Garlic
- Zest of 1 Lemon
- 1 Teaspoon of Dried Oregano
- 1/2 Teaspoon of Cumin
- 1 Tablespoon of Dijon Mustard
- 50g of Feta
These have so much flavour and are quickly becoming one of my weekly go-tos. They’re full of protein and so simple to make. They’re ideal for prepping ahead of time for lunch boxes or snacks and they taste amazing with pretty much any side. The lemon zest, spices and hint of mustard are such a good combo and they’re just so handy for a busy week!
Preheat the oven to 180’C.
Add the spinach, garlic and onion to your food processor and blend until fine.
Add it to a large bowl with the turkey mince, spices, lemon zest and mustard. Crumble the feta in too. Season with a good pinch of coarse salt and pepper and mix thoroughly with clean hands.
Use damp hands to roll the mixture into balls. Place them on a roasting tray and cook at 180’C for 20-25 minutes until cooked through.
