Shaved Summer Salad

Ingredients

  • 200g of Courgette
  • 200g of Asparagus
  • 40g of Watercress
  • 30g of Feta
  • 30g of Pistachios

For the Dressing:

  • 5g of Fresh Mint
  • 2 Tablespoons of Olive Oil
  • 1 Tablespoon of Lemon Juice
  • 1 Tablespoon of Red Wine Vinegar
  • 1 Teaspoon of Dijon Mustard
  • Coarse Salt & Pepper

When gorgeous veg is in season you don’t even have to cook it to create something incredible. Asparagus, courgette, watercress and mint are all fabulous this time of year and they compliment each other beautifully in this simple raw salad. The courgettes and asparagus are shaved into pretty ribbons so they’re nice and thin but have a lovely crunch. The dressing is zingy and fresh and it’s all topped with some crumbly feta and even more green goodness from the toasted pistachios.

Wash and pat dry the asparagus and courgette. Use a vegetable peeler to peel them into ribbons. The courgette is really easy, the asparagus takes a little patience. Add them to a large bowl.

Crumble or cube the feta and add it to the bowl along with the watercress.

Add the pistachios to a pan on medium heat and toast them for a few minutes until golden. While they’re toasting, very finely chop the mint and add it to a bowl with all of the other dressing ingredients and whisk it well.

Drizzle the dressing onto the salad and toss well. Sprinkle on the pistachios, whole or chopped, and serve.
