Spinach & Basil Egg Wraps

- 6 Eggs
- 2 Cups of Spinach (60g)
- 6-8 Basil Leaves
- 1 Teaspoon of Coconut Oil
This is the handiest little recipe! Just 3 ingredients whizzed up and you’ve got yourself a delicious healthy wrap. They’re a great source of protein and iron and you can fill them with anything and everything just like a regular wrap, plus they look so gorgeously green they’ll brighten up any plate!
Add the eggs, spinach and basil leaves to your food processor. Blitz on high until you have a thin, smooth green mixture (it looks like a green juice!).
Add a little coconut oil to a medium sized pan on medium high heat. When the pan is hot, pour in about a quarter of the mixture and swirl it around to fill the pan, like a crepe!
Let it cook for a minute or two and then (very carefully!) flip it like a pancake and cook on the other side.
Repeat with the rest of the mixture and then serve with your desired fillings.
