Greek Salad


  • 1 Large Cucumber
  • 10-15 Cherry Tomatoes
  • 1 Red Onion
  • 1 Large Handful of Coriander
  • 1 Avocado
  • 50g of Feta

For the Dressing:

  • 3 Tablespoons of Olive Oil
  • 2 Tablespoons of Red Wine Vinegar
  • 1 Teaspoon of Dried Oregano
  • Black Pepper

Greek salads have always been one of my favourite things, it was my go to summer snack when I was little. I just love the way the fluffy feta absorbs the sharp vinegary dressing and it’s so crunchy, refreshing and delicious. Some greek salads have olives but I’ve left these out and replaced them with some creamy avocado, as well as adding a big bunch of coriander for some extra flavour and freshness. Ready in a matter of minutes, this is the perfect addition to any meal, any time!



I like to slice my cucumbers really thin for this salad. There’s a couple of easy ways to do this- you can use the curly slicer attachment of your spiralizer (like I did), use a mandolin grater or use the slice attachment of your food processor. Otherwise, you can of course just slice the cucumber to your liking but all of the above are really quick and give you gorgeously thin cucumber slices.


Add the cucumber to a large bowl. Quarter or half your cherry tomatoes, depending on their size, dice the red onion and cube the feta. Add it all to a bowl.


Cube your avocado and  finely chop the coriander, then add both to the bowl. Combine the dressing ingredients in a bowl or glass and then pour it over everything, tossing it all together.


Serve and enjoy!
