Massaged Kale Salad

- 100g of Kale
- 2 Eggs
- 1 Handful of Hazelnuts
- Olive Oil
- Balsamic Vinegar
- Salt & Pepper
Raw kale can be so delicious, you just have to treat it right! Massaging kale breaks down its’ cellulose structures, transforming it into a soft silky green which is amazing in salads. This combo is so yummy, kale and eggs are gorgeous together and the soft yolk with the crunch of toasted hazelnuts is divine.
Chop the stalks off the kale and give it a rough chop. Add it to a large bowl and drizzle it with a little bit of olive oil, about a teaspoon. Use your hands to massage the kale, rubbing and squeezing it for about 5 minutes. You’ll notice the colour and texture of the kale change as you massage it (you can see this in the picture below, massaged kale on the left!)
Medium boil your eggs. While they’re on, toast the hazelnuts in a pan for 2-3 minutes on medium heat.
Chop the eggs and add them to the kale with the toasted hazelnuts. Drizzle with a little more olive oil, balsamic vinegar and add a sprinkling of salt and pepper. Enjoy!
