Crispy Cod and Tartar Sauce

For the Fish:
- 2 Cod Fillets (or white fish of your choice)
- 1/2 Cup of Ground Almonds (60g)
- 2 Tablespoons of Coconut Flour
- 1/2 Teaspoon of Paprika
- Coarse Salt
- Coconut Oil
For the Tartar Sauce:
- 1/2 Cup of Greek Yoghurt (120g)
- 2 Tablespoons of Capers
- 8 Cornichons
- Small Handful of Parsley
- Juice of Half a Lemon
This is one of my favourite dinner recipes. A healthy twist on a classic with an amazing combination of flavours. Serve it with mushy peas for the perfect pairing. Ready in under ten minutes it’s is the ideal comforting, healthy mid week dinner.
Lay your fish out on a piece of parchment paper. Combine the ground almonds, coconut flour, paprika and salt in a bowl. Sprinkle the almond mixture over one side of the fish evenly, then flip it over and repeat.
Heat some coconut oil in a pan on medium/high heat. Add the fish to the pan and cook for a few minutes on each side.
While the fish is cooking, make the tartar sauce. Add all of the sauce ingredients to the food processor and blitz until well combined and the capers and cornichons are broken up into little chunks.
When the fish is cooked through and nice and golden, plate it and top it with the tartar sauce. I had mine on a bed of mushy peas (I just boiled the peas for a few minutes, drained them and added them to the food processor with a little salt, fresh mint and a tablespoon of the tartar sauce)
