Cashew & Mint Fresh Rolls

- 2 Rice Paper Sheets
- 1 Carrot 1/4 Cucumber
- 1 Onion
- 1 Handful of Bean Sprouts
- Cos Lettuce
- 1 Tablespoon of Cashews
- Few Mint Leaves
- Optional: 1 Chicken Breast, Avocado, Red Cabbage etc any other veg you like!
This is one of my favourite things that my mom used to make for us on hot days when you feel like a fresh and healthy lunch. Fresh rolls are so yummy, all the satisfaction of a spring roll without any of the grease or guilt! The sheets of rice paper when they’re fresh, rather than fried like most people are used to, are really low in calories (only about 30 cals per sheet) and are so delicious when they’re filled with all these gorgeous ingredients! These are perfect with my Thai Sweet Chili Sauce.
If you’re using chicken start by cooking it and then set it aside (I pan fried mine in a little coconut oil, chill and lime and cut it into long slices). If you’re not, then just use more veg or add some avocado.
Chop all of your veg and dry roast the cashews for a few minutes until golden. You can either chop the cashews or leave them whole. Then set everything out so you’re ready to go.
Fill a large shallow bowl with warm water. Use your hands to gradually slide the rice paper sheet into the bowl and hold it in there until it completely softens and looses all of its rigidity.
Then carefully lay the soft sheet out on a kitchen towel (apologies for the photo, they’re so translucent you can barely see!). Lay out your veg near the bottom of the rice sheet. Leave about an inch at each side also.
Then add in the chicken, avocado, mint and cashews.
Top with a large leaf of lettuce to hold everything in place.
Fold each side over the end of the filling.
Then tightly roll the up the sheet, starting at the bottom near the filling.
That’s it, cut in half and serve! If you’re in a hurry you can make a simple dipping sauce of sushi vinegar, honey and a few chilli flakes, otherwise definitely try my Thai Sweet Chili Sauce.
This recipe is Gluten Free, Dairy Free & Vegan (if you don’t use chicken!)
