Grain Free Courgette & Walnut Bread

Ingredients

  • 4 Eggs
  • 1 Tablespoon of Honey
  • 1/4 Cup of Melted Coconut Oil (60ml)
  • 1 Large Courgette (or 2 small)
  • 3 Cups of Ground Almonds (360g)
  • 1 Teaspoon of Baking Powder
  • 1/2 Teaspoon of Cinnamon
  • 1/2 Cup of Walnuts, Roughly Chopped (75g)

My Paleo Cranberry & Pecan Bread was such a hit last week, I decided to put up another bread recipe sooner than I had planned. I saw courgette bread mentioned somewhere recently and remember having it years ago and loving it, so I just tweaked my usual grain free bread recipe to come up with this. It’s lovely and moist and is delicious in a sweet or savoury way-with the subtle hint of cinnamon and the crunch of the walnuts. It’s great toasted with you’re favourite eggs or as a sweet treat with some jam!

Add the eggs, honey and coconut oil into a large bowl and mix.

Grate the courgette and then add it into the egg mixture and mix.

In a separate bowl, combine the almond flour, baking powder and cinnamon. Then mix them into to the egg and courgette.

Roughly chop the walnuts and add them to the mixture.

Line a bread tin with parchment paper and pour the mixture in. I decorated the top with a line of whole walnuts. Bake at 180’C for about 40 minutes.

Take out and serve, hot, cold or toasted.

      Yes it can, let it cool completely before wrapping it in a layer of cling film and then a layer of tin foil (using both works best for me!) and then let it defrost the night before serving! Enjoy x

Your recipes are amazing, particularly loving this bread right now, so light and easily digested 🙂 I was wondering would you maybe have an estimate of how many calories per portion as I am recording my calories per day at the moment using myfitnesspal app. I usually have 2 slices per portion.
