Paleo Garlic Mayo

Ingredients

  • 1 Egg
  • 3 Teaspoons of Lemon Juice or Red Wine Vinegar
  • 1/2 Cup of Coconut Oil, Melted
  • 1/2 Cup of Olive Oil
  • 2 Cloves of Garlic
  • Pinch of Coarse Salt

I used to HATE mayonnaise! My boyfriend on the other hand, is obsessed, and after a few years of persuasion I’ve come to love certain kinds. My favourite, by far, is garlic mayo and ironically I’ve become quite dependent on it now that I’ve embraced it. So here’s my paleo mayo recipe, there’s so much you can do with it- add mustard, chili, pesto (My Paleo Pesto recipe here), hot sauce etc to make all different taste transforming flavours in a matter of seconds… Thank me later!

 Add the egg and lemon juice/vinegar to the food processor and blend until combined.

Combine the oils. Then very slowly add the oil in to the egg mixture gradually on low speed (this is very important!). It should take a few minutes for you to pour in all of the oil. You’ll notice it thicken with each addition and when all of the oil has been added it should be thick and glossy.

Then add in the salt and garlic cloves and blitz on high for about 20 seconds. Voilà, it’s done! Store in the fridge in an air tight container (due to the coconut oil it may solidify in the cold, so take out of the fridge prior to eating to allow it to soften).

I served mine with my Maple & Cayenne Sweet Potato Wedges.

    A lot of them call for olive oil however could you use rapeseed oil instead, as I’m not a lover of olive oil.
