Raspberry Chia Jam
March 26, 2014 | Makes 1 Jar
- 2 Cups of Raspberries
- 2 Tablespoons of Chia Seeds
- 2 Tablespoons of Honey/Maple Syrup
Like most people, I love a good jam. But it’s undeniable that most kinds contain shocking amounts of sugar. They’re also quite time consuming, standing over your bubbling pot of jam waiting for all that sugar to set. I saw such gorgeous raspberries in the shop today and the first thing that sprung to mind was to finally make a healthy batch of jam. My Raspberry Chia Jam is both quick and healthy and just as tasty as what your used to. Chia seeds are amazing, not just for their nutritional properties but for their versality and the amazing ways you can use them. Just as you would in chia pudding, I’m using them to make the jam thick and gelatinous just like the real thing! This jam can be made in a matter of minutes and is a great way of sneaking chia seeds in to your diet.
Add the raspberries to the food processor and blend until smooth.
Add the chia seeds and sweeter and blitz. Let the mixture rest for about a minute to allow the chia seeds to absorb some of the mixture and thicken it. Blitz it again and voilá, the jam is done!
Store it in an air tight jar in the fridge and use just as regular jam! I love having mine on wholewheat toast or adding it to oats in the morning with almond milk and coconut flakes, pink porridge as I call it!
