Paleo Twix Ice Cream Bars

For the Crust:
- 2 Cups of Ground Almonds
- ½ Cup Coconut Oil, Melted
- 1 Teaspoon of Salt
- 2 Tablespoons of Honey/Agave/Date Syrup
- 1 Teaspoon of Vanilla
For the Caramel:
- ½ Cup of Coconut Sugar
- 1 Teaspoon of Salt
- 1 Can of Low Fat Coconut Milk
For the Topping:
- 150g of Dark Chocolate
- 1 Tablespoon of Coconut Oil
If you’ve seen my last few posts you might have noticed I’ve become a little obsessed with making clean versions of regular chocolate bars. I decided to take it a bit farther and try and make one of the ice cream versions. Twix ice creams were one of my favourites when I was little so I couldn’t wait to try and make a healthy version! I’m really proud of how much these taste like the real ones, they’re a little time consuming to get the caramel just right but it’s so so worth it. As soon as you taste the first bite I’m sure you’ll agree!
Combine the ground almonds and one teaspoon of salt and then add in the coconut oil, honey and vanilla a mix it well. You should have quite a wet, heavy doughy mixture.
Press the dough into a baking tin lined with parchment paper and bake at 160’C for about 12 minutes until golden brown, let it cool on a wire rack until the caramel is done.
Here comes the tedious bit! While the crust is baking, add the coconut milk and coconut sugar to a saucepan and bring it to a gentle boil, stirring it constantly. Then add in a teaspoon of salt. Leave this to simmer on low/medium heat, stirring regularly for about 15 minutes to allow it reduce and thicken. When it’s a nice chestnut brown colour take it off the heat and allow it to cool for a few minutes.
When it’s cooled down, pour it out over the crust and pop it in the freezer until the caramel sets. Usually for other recipes I would let the caramel thicken and reduce more but as this is going in the freezer anyway there’s no need!
When the caramel is set and nice and chewy, melt the chocolate and stir in one tablespoon of coconut oil. Take the bars out of the freezer and slice them. They are also amazing at this point just as they are!
Separate them like above on parchment paper and pour the chocolate over them. It’s hard to get them all perfectly covered but even if they don’t look it, they’ll taste perfect!
Put the bars in the freezer for a few minutes for the chocolate to harden and then enjoy!
Store these in the freezer!
