Sundried Tomato, Feta & Pine Nut Sauce
This sauce is light and clean but tastes so luxurious. It’s amazing on chicken, as a dipping sauce or with pasta. Whatever you plan to have it with, prepare everything else first as this only takes about a minute to prepare and can be done at the last minute! Shown below with my recipe for the perfect Courgette Pasta.
250g of Low Fat Greek Yoghurt
1 Clove of Garlic, Peeled
3-4 Large Sundried Tomatoes
Squirt of Lemon Juice
Salt & Pepper to Taste
50g of Feta, Crumbled or Sliced
Handful of Pine Nuts
Add the yoghurt, garlic, sundried tomatoes, lemon, salt & pepper to the food processor and blend until smooth.
Toast the pine nuts in a frying pan for 1-2 mins, tossing them every few seconds so that they don’t burn and slice the feta.
Pour the sauce over your pasta/chicken while they’re hot, sprinkle with the toasted pine nuts and crumble the feta on top.
