Cinnamon Almond Butter Overnight Oats

- 1/2 Cup of Gluten Free Oats (50g)
- 1/2 Cup of Almond Milk, Unsweetened (125ml)
- 2 Teaspoons of Almond Butter
- 1 Teaspoon of Cinnamon (this may be too much for some people, so adjust according to your tastes!)
- Drizzle of Honey/Maple Syrup (optional)
Overnight oats make the perfect delicious and nutritious breakfast or dessert. As the name suggests, they’re made ahead of time so they’re great if your in a rush or on the go. Preparing them straight into the jar makes them ideal for taking with you to have at work or even on the way in. There are so many ways they can be prepared with different fillings and toppings so this particular recipe is just my simple go-to flavour. I love them so much I find myself actually craving them and tend to have them for dessert as often as for breakfast.
Start by putting about 3 tablespoons of dry oats into a jar, then pour in just enough almond milk to soak and cover the oats.
Whatever flavour I’ve decided to go with, I like to layer it throughout the jar to get an even taste but you can just as easily add everything on top if your in a rush… So for this one, after the first layer of oats I added a teaspoon of almond butter.
Then, repeat the first step – 3 tablespoons of oats and almond milk.
For this layer I sprinkled about half a teaspoon of cinnamon all across the top.
Next, add the last 3 tablespoons of oats and cover with almond milk.
After the last layer, you can add a squirt of honey/maple syrup if you like it sweet. For the topping I usually add in a bit of all the flavours, so in this case I dusted the oats with another half teaspoon of cinnamon, added a teaspoon of almond butter and then sprinkled a few toasted pumpkin seeds and sunflower seeds for a bit of crunch!
Lastly, just put the lid on and pop it in the fridge over night and it’ll be creamy and delicious for breakfast the next morning! If you don’t have time to leave it overnight, they’re still perfectly yummy after about an hour or so, but the longer you leave them the nicer the consistency. For perfect results, make them just before bed.
